Almost Raw Carrot & Sweet Potato Soup
I call this version “almost raw” because I love the flavor and texture that roasted sweet potatoes and onions give it. However, you may make this soup “raw” just don’t roast the potatoes and onions. This soup is detox approved for our “Fresh Food and smoothie Detox” program. But, it is so good you will want it anytime.
2 washed, peeled and roughly cut up sweet potatoes
1 large onion, peeled and quartered
1 celery stalk washed, trimmed and diced (about a ¼ cup)
7 or 8 washed, peeled and sliced carrots
4 cups of pure filtered water
1” knob of peeled fresh ginger
2” knob of peeled fresh turmeric
2 to 3 cloves of garlic, peeled
Cracked Black Pepper
Pink Himalayan Sea Salt (or your choice of a high quality salt, a smoked sea salt would be lovely too)
Garnish optional: raw sprouted pumpkin and sunflower seeds, diced apple, diced avocado, watercress, red onion, etc. be creative)
Spray or coat a baking sheet with coconut oil and roast potatoes and onions at 350 degrees (176-C) till potatoes easily pierce with fork and onions start to brown (about 20-30 min). DO not over cook.
While potatoes are cooking throw everything into your vitamix (or any high speed blender) Whip up. When ready (about 20-30 minutes) add roasted potatoes and onions, salt & pepper to taste and place on soup cycle (the beauty of the vitamix) and let it go until it comes to a full stop. If you do not have a soup cycle, transfer to a pot and warm through do not overheat. Garnish as you like and serve warm or room temp.
